Day 3

So far so good... The only thing, I must say, I'm having a hard time finding time to eat so often throughout the day! It's extra tough when you have a job that requires you to be on a sales floor, not sitting at a desk :( However, I am making it work the best I can! The point of doing this wasn't life or death, I just needed to start making some healthier choices and get my diet on track!

Here's some food photos from today... I snacked earlier, 1 green apple and some almonds! (If you're curious about serving size, it traditionally is measured by the palm of your hand. "A handful" is usually considered 1 serving.)

Lunch: 2 cups chopped romaine, 2 hardboiled eggs (1 pictured above), 1 roma tomato, chickpeas, 2tbsp balsamic vinegar

Note to self: drink more water (this is one of my biggest struggles... I'm soo bad for not drinking enough (or any--wow! double parentheses) water)!!

OH!! I also feel like I should mention... The meals I am taking photos of are NOT the ONLY meals I am eating!!! I am eating other things on this meal plan, I just haven't taken the time to photograph everything! I don't want anyone thinking I am only eating/drinking the things on this blog. Okay, disclaimer done.

I wish I had taken a picture of dinner tonight! It was delicious. I made quinoa topped with tofu marinated in teriyaki sauce with mushrooms, onion and red pepper! Like stirfry minus the rice and chicken.. Subbed with tofu! I personally love tofu.

I must admit, I am not being super strict, but I plan to slowly crack down!! I'm easing in to it... For example, I'm eating ice cream right now. (That's definitely not in this meal plan.. Sorry)
