Day 2

I have no idea how people stay on top of all this meal prep... I don't have time to do everything I need to do and prepare meals! It's tough!

I worked out early this morning so my first "meal" was a protein shake!

1 scoop of protein powder and 8oz of water.. Shake! 

Lunch was delicious, actually!  Note to self: next time.. Use less onion... Boyfriend did not enjoy.

This was my first time actually making quinoa! I've eaten it many times but I've never prepared it myself! I was surprised how easy (and delicious) it was!!

1/3 cup uncooked quinoa, add to boiling water, lower temp, let sit.  
1/2 red pepper, onion, chickpeas, cilantro & lemon juice--mix! 
Combine! 

You can prepare this however you'd like, I just put the quinoa on the bottom and that zesty veg/chickpea mix on top! It was super delicious and filling, actually! I was surprised.
